Oven roasted potatoes with Honey & wine

INGREDIENTS for 4-6 persons

  • 1 ½ kg potatoes, preferably organic, peeled & cut in thick pieces, like half a lemon
  • 2/3 cup honey to your liking
  • 600ml red wine
  • 1 tablespoon coarsely crushed dry coriander
  • 2 small cinnamon sticks
  • Salt, pepper
  • 1-1 ½ glass chicken broth or water
  • ½ teacup oil



Preheat the oven to 200οC. Spread the potatoes on a roasting pan, add salt, pepper, and then coriander, cinnamon sticks and oil. Dissolve the honey in wine and pour it over the potatoes. Add one glass of brothor water and put the pan into the oven. Just before the potatoes soften, take the pan off 2-3 times and stir well so they don’t stick to the bottom. If necessary, add some more brothor water. They are done when they are tender and the sauce has thickened.
